Ingredients:
2/3 cup cold chickpeas (garbanzo beans)
1 cup cold brown rice
3 cups fresh baby spinach
about 2 tbs lemon juice
1 1/2 tsps olive oil
salt to taste

Recipe Instructions:
Combine chickpeas, rice and spinach. Add lemon juice and olive oil and toss. Salt to taste. It's also yummy to marinate one serving of cubed tofu in the olive oil, lemon juice, and salt for 30 minutes, then throw in and toss right before serving.
