Recipe Description:
Incredibly easy and delicious
|
Ingredients:
Corn Tortillas
Chinese tofu (Bayan)
Coconut or Olive Oil
Bell Pepper (green and red)
Mushrooms
Zucchini
Eggplant
Veggie Shreds or any Vegan shredded cheese
Old El Paso Green Chile Enchilada sauce (HEB - $.97)

Recipe Instructions:
PREHEAT oven to 425
FRY the tortillas (both sides) in oil for about 3-5 seconds
CHOOSE veggies you love
CHOP veggies into squares and tofu into strips (like fries) cook until they're golden
ADD mix to tortillas and roll them up add cheese inside if you like
POUR green chile enchilada sauce all over (you can use anykind of sauce)
SPRINKLE your choice of "mozzarella cheese"
PLACE in oven until cheese melts (about 10 min)
ENJOY!
