Recipe Description:
When I first became vegetarian while still living in my home country Poland, I’ve never heard of tofu. Any of my local groceries didn’t even carry it. Fortunately soybeans were easily accessible so it was my main source of protein. And it’s a great substitution for animal protein. It contains 40% protein, a lot of fiber, Omega-3 fatty acids, Isoflavones. Moreover it is the only plant protein that contains full set of essential amino acids like animal protein.

Ingredients:
Ingredients (about 8-10 patties):
3 cups cooked soybeans (or canned soybeans)
2 medium potatoes
1 egg (for vegan option skip the egg potatoes should act enough as a binder)
1 chopped onion
1 minced garlic
1 tsp of favorite dry herbs such as marjoram, oregano, thyme etc.
2 Tbsp fresh parsley finely chopped
Salt, pepper
All purpose flour
For the mushroom gravy:
1 cup sliced crimini mushrooms
1 cup vegetable stock
2 tsp cornstarch
1/2 onion chopped
Salt, pepper
1 Tbsp butter
1 tbsp chopped parsley

Recipe Instructions:
To prepare gravy saute the onion with 1 Tbsp of butter and when soft add mushrooms. Continue cooking few more min. Meanwhile mix cold stock with cornstarch and add to the pot. Mix well, bring to a boil and continue cooking 5 min. Season to taste with salt, pepper and parsley.
For the soybean patties peel the potatoes and cook in a boiling water. Mash them slightly and put into a food processor together with soybeans and egg. Process until fairly smooth.
Saute the onion until soft and add to the mixture together with garlic, herbs, parsley. Mix well and season to taste with salt and pepper.
Form uniform patties, bread in all purpose flour on both sides and fry on a medium heat until golden brown.
You can easily freeze them, just wrap in aluminum foil and you have easy dinner for the future.
